White Tea Ritual White tea is made from new growth buds and young leaves of Camellia sinensis. Painstakingly plucked only two days of the year and right before the leaf opens. The leaves are steamed or fried to inactivate oxidation, and then dried.

White tea retains high concentrations of catechins and higher levels of caffeine that can only be found in buds and younger tea leaves . White tea is a specialty of the Chinese province Fujian. The leaves come from a number of varieties of tea cultivars --- Da Bai (Large White), Xiao Bai (Small White), Narcissus and Chaicha bushes.
